1 cup raisins
2/3 cup peanut butter
2/3 cup honey
½ tea cinnamon
1 tea vanilla
4 cups oats
2 apples shredded
½ cup coconut
Pour boiling water on raisins and let stand until ready to use
In a saucepan combine the peanutbutter, honey, cinnamon and vanilla until heated through.
Place oats in a roasting pan and pour peanut butter mixture over oats. Mix in apples and coconut mix thoroughly until all oats are covered.
Bake at 300 degrees for 30-40 minutes. Drain raisins and mix into granola. Turn off the oven and leave granola in the oven for several hours until dry.
Take your time and make sure that all the oats are well coated with the peanut butter-honey mixture.
Don’t limit yourself to what type of dried fruit you use, everyone’s likes are different. I tend to use whatever I happen to have in the cupboard at the time. I’ve tried the granola with different combinations of nuts, dried apricots or cranberries, dried figs, peaches or banana chips
